Vegetable Pasta Scampi

(Serves 2-4)

Ingredients:

-1, 9 oz. box of spaghetti

-1 tablespoon of salt

-2 tablespoons of olive oil

-2 cloves of minced garlic

-1 sliced green pepper

-1/2 of a sliced onion

-1/3 cup of lemon juice

-1/3 cup of dry white wine (sauvignon blanc works well)

-2 tablespoons of chopped parsley

-1 teaspoon of red pepper flakes (optional)

 

Directions:

Fill a large pot of water on high heat to bring to a boil for the spaghetti. Once boiling, heavily season with salt, as this is your only time to season the pasta. Cook the spaghetti for 6-8 minutes until al dente and strain. In a large sauté pan on medium high, heat the olive oil to begin sautéing the garlic, peppers, and onions. Once the vegetables have softened and browned lightly, deglaze the pan with the lemon juice and white wine. Let the sauce simmer until it has reduced in size to be certain the alcohol taste has cooked out. Add the cooked spaghetti straight into the vegetables and sauce until coated throughout. Finish the pasta with chopped parsley and red pepper flakes (if desired) and serve immediately!
