Mediterranean Chick Pea Salad

(serves 2-4)


-2, 13 oz. cans of drained garbanzo beans (chick peas)

-1 diced red pepper

-1/4 of a red onion, diced

-1/4 of a cucumber, diced

-1/4 cup of extra virgin olive oil

-2 tablespoons of red wine vinegar

-1/2 of a juiced lemon

-1 tablespoon of red pepper flakes (less if you don’t like heat)

-salt and pepper to taste



In a large bowl whisk together the ingredients for the dressing being the olive oil, red wine vinegar, lemon juice, red pepper flakes, and salt and pepper. To that, add in all the chopped vegetables and the drained garbanzo beans to the bowl. Mix to combine and chill in the refrigerator for 15-30 minutes until cold. Serve cold on it’s own, mixed with a pasta (orzo would be yummy), or even atop greens for a nice salad!
