Gluten Free AND Vegan Pancakes

Ingredients:

-1 cup of gluten free flour* (can use regular all purpose flour as well)

-1 tablespoon of baking powder

-1/4 teaspoon of xanthan gum

-1/4 teaspoon of salt

-1 cup of dairy free milk (almond, soy, coconut etc)

-2 tablespoons of melted coconut oil

-2 tablespoons of sugar (or sweetener)

-1 teaspoon of vanilla extract

 

Directions:

Heat a large griddle pan on medium high heat so by the time the batter is finished the pan will be hot enough for the pancakes. In a large mixing bowl combine the flour, baking powder, xanthan gum, and salt and whisk completely. In a large liquid measuring cup combine the wet ingredients (milk, oil, sugar, and vanilla) to then add to the dry mix. Whisk thoroughly, yet having a few lumps in the batter is okay! Melt another tablespoon of coconut oil onto the heated griddle pan so the pancakes don't stick, then ladle about 1/4 of a cup of batter onto the pan. Cook until bubbles arise in the pancake batter and flip to finish on the other side. Serve hot and enjoy with natural maple syrup for a delicious vegan AND gluten free breakfast!

 

*All Purpose Gluten Free Flour

-4 cups of white rice flour

-2 cups of brown rice flour

-2 cups of tapioca flour

-1 cup of potato starch
