Lemon Garlic Kale Chips

Garlic Lemon Kale Chips

(Serves 2-4)

Ingredients:

-1 large head of kale

-1 large clove of garlic (or 2 small)

-2 tablespoons of lemon juice

-3 tablespoons of olive oil

-1 teaspoon of salt and pepper to taste

-2 teaspoons of red pepper flakes (optional)

 

Directions:

Preheat oven to 350F degrees. Rinse kale and pat dry. Make sure the kale is completely removed of all water and moisture so that it can crisp up in the oven. Cut the stem off of all the kale leafs and chop kale into bit size pieces. In a large mixing bowl combine kale with minced garlic, lemon juice, oil, salt, pepper and seasonings, making sure every piece of kale is covered with all the ingredient components. On a large cookie sheet pan, lay out the kale pieces on a single layer so that each kale chip can cook evenly. At 350 degrees bake the kale chips for about 10-15 minutes, checking on the periodically. Once crisp and darker in color, remove the chips from the cookie sheet and let the oil dry off the chips on a cooling rack laid with paper towels. Allow the chips to cool for 5 minutes and enjoy this healthy snack!


Kale chips are a great alternative snack to fried potato chips! Try different flavor combinations like sea salt and vinegar, cheesy ranch chips with nutritional yeast and dill, or even chili lime!
